If you’re lacking creative ideas for Christmas presents or looking to add that sweet treat to your winter evenings then why not try your hand at this recipe for festive fudge. I love this recipe because it's so simple and easy to follow.


All you will need is:


- 400g white caster sugar

- 300ml double cream

- 40g unsalted butter

- 1 tsp vanilla extract

- Christmas sprinkles

- White chocolate chips


Here’s the ‘how to’:


Grease and line an 18cm square baking tin with baking parchment.


In a large saucepan melt the butter on a gentle heat. Add the double cream and caster sugar to the saucepan, stirring until all the sugar dissolves. Bring the mixture to the boil and then leave to boil for 8 to 10 minutes without stirring. You want the mixture to look really aerated and frothy.


Once 8 minutes has passed take a small bowl and fill it with some ice cold water, take a small teaspoon of mixture and drop it into the water, if it solidifies or forms a ball then it is ready.


Remove from the heat and leave it for about 5 minutes. Add the vanilla extract and beat the mixture for around 3 to 5 minutes or until the mixture thickens and comes together away from the sides of the sauce pan.


Pour the mixture into the prepared tin and sprinkle with the chocolate chips and festive sprinkles. Leave to cool completely before chilling in the fridge for around 2 hours. Then cut into small squares.


It’s really up to you how much or little decoration you add to the fudge.
