Creates, Bakes and Cakes




Now I love cookies as much as the next person but why is it that sometimes they just end up looking a bit flat….tasty, but flat.


Here is a neat little trick that I’ve tried lately to make sure that your cookies have shape every time. I’m calling them cookie cakes.


Start by preheating your oven to 190°C, gas mark 5 and greasing 2 shallow pastry tart trays (these are essential for keeping the shape).


Grab a large, clean bowl and measure out; 150g salted butter; 80g light brown muscovado sugar and 80g sugar. Beat it together until smooth and then throw (not literally) into the mix; 2tsp vanilla essence; 1 large beaten egg; 225g plain flour; and ½ tsp bicarbonate of soda. Mix it all together until well combined before adding any extra flare you want, chocolate chips, chocolate chunks or in my case Smarties.































Place a spoonful of mixture into each section of the tart tray and bake in the oven for 10-12 minutes until light brown but still slightly soft when pressed.































Leave them in the tray for a few minutes to allow them to harden slightly before carefully lifting them out onto a cooling rack.




















So the next time you feel like having a chilled afternoon reading or catching up on some much needed TV why not make a fresh batch of these little treats to enjoy.
