Here's a recipe to go bananas about… It's a classic, timeless loaf recipe perfect for any occasion.

Doesn't it just drive you crazy when you bought a bunch of bananas that were not quite ripe only a few days ago, haven't had a chance to eat them and they have already turned overripe and are looking, well, a bit past their best.

"Waste not, want not" I say... Take those unappetising bananas and turn them into this delicious, sweet loaf.

Start by preheating your oven to 180°c, gas mark 4 and line a 2lb loaf tin with baking parchment.

Using your electric mixer cream together 140g butter and 140g caster sugar until pale and smooth. Add 2 large, beaten eggs into the mix along with 140g self-raising flour and 1tsp baking powder. Fold together to fully combine.


















Mash up at least 2 bananas and fold these into the mixture as well.

Pour into the prepared tin and bake in the oven for around 30 minutes, test by inserting a skewer into the loaf, if it comes out clean then it is ready.

Remove from the oven and allow to cool slightly before turning out onto a wire rack to cool completely.

The final step is to cut a nice, chunky slice of the bread, put it on a plate and top with a scoop of vanilla ice cream. Enjoy!
